Cherry Pistachio Parfaits

Parfaits are great for any time of day. It all depends what you put on them. I’ve seen them made in so many ways: with ice cream, yogurt, or pudding...and then fruit, granola, nuts, chocolate, or a combo. If you’re focusing on colon health, Greek yogurt with probiotics would be the best choice. You not only get probiotics that support your immune system and replenish the good bacteria in your gut, but you are also getting a nice amount of protein in one dish.

Aside from protein, these parfaits are packed with other great things for your colon- like fiber, magnesium and selenium! Fiber is what helps move waste and toxins out of your body, and many fruits like cherries, nuts such as pistachios, and even dark chocolate have the fiber you need for a healthy colon. Plus, magnesium, found in the cherries and pistachios, as well as the selenium in pistachios can help lower your risk of colon cancer.

These cherry pistachio parfaits are full of flavor, with hints of mint and chocolate. They’re a gourmet yogurt idea for a healthy breakfast or snack, but they’re also just sweet enough to be a dessert.

 

Ingredients (2 servings):

  • 2 (8-oz.) containers of Chobani vanilla Greek yogurt
  • 2 tsp fresh mint leaves, finely chopped
  • 8 whole dark cherries with stems, pitted
  • 6 tsps pistachios, shelled & chopped
  • A bar of dark chocolate

Directions:

  1. Stir 1 tsp of finely chopped mint leaves into each container of vanilla Greek yogurt. Pour about a third of that mint-yogurt mixture into the bottom of each dessert dish. Then add 1 tsp of chopped pistachios to each.
  2. Remove the stems from 6 cherries and dice them. Add a layer of 1 tbsp of diced cherries to each parfait, and then another third of the mint-yogurt mixture.
  3. Shave 4 tsp of chocolate shavings from the dark chocolate bar, using a “lemon” zester. Place 1 tsp of the chocolate shavings into each dish, then another tsp of chopped pistachios. Divide the rest of the yogurt mixture onto that.
  4. For the topping, add another tsp of pistachios, and 1 tsp of dark chocolate shavings to each parfait. Then place a cherry on top (with a few mint leaves for garnish). Serve right away or chill for dessert later.
