Chia Cherry Energy Balls

I was familiar with chia seeds as a kid, several decades ago, when “Chia Pets” were popular gift items. Somewhere along the way, we realized that those little seeds are not just good to grow, but also good for us to eat. Chia seeds are great sources of fiber, protein, iron, calcium and omega 3 fatty acids!

Dietary fiber is important for a healthy digestive tract; getting an adequate amount in your diet helps your body eliminate toxins and waste. We should aim for 25 to 30 grams of fiber each day. The oats, almond butter and cherries in these energy balls provide lots of fiber, along with the chia seeds that coat this snack. If you eat just 5 energy balls, you’re getting about 7.5 grams of fiber, as well as 10 grams of protein!

So, pass by whatever unhealthy sweet snack you see in the vending machine. Let these sweet Chia Cherry Energy Balls satisfy your sweet tooth and keep you going through your day.

Ingredients: (makes about 25 energy balls)

1 cup old-fashioned oats
½ cup almond butter
¼ cup honey
⅛ tsp vanilla extract
¼ cup dried cherries, chopped
4 ½ tbsp chia seeds

1. Toss oats, almond butter, honey and vanilla extract in a medium mixing bowl. Stir together with a spoon. Then carefully mix in chia seeds and dried cherries.
2. Place chia seeds into a small bowl.
3. Using clean hands, grab some of the oat mixture and form into tight balls about 1 ½ inches in diameter, then roll each into the small bowl to coat the outside with chia seeds.
4. Place into a container and refrigerate for 30 minutes.
