Dairy-Free Chocolate Pudding

The perfect dish for those who like sweets but need to eat a little healthier.

This dish disguises healthy avocados in a chocolate dessert. Avocado acts as a thickener and provides the creaminess needed for pudding. You’ll want to eat more of them once you’re reminded that they are an excellent source of fiber—13 grams in just one avocado! Dietary fiber is so important for colon health. It not only normalizes bowel movements, but studies show that increasing your intake of fiber can reduce your risk of colon cancer. The addition of a banana and a couple of dates to this pudding not only adds more fiber, but also makes it thicker and sweeter.

Besides providing a delicious source of fiber, this pudding has other benefits for colon health. Bananas contain a good bit of magnesium and selenium, and research shows these two minerals can help lower your risk of cancer. Higher vitamin D levels are associated with a lower risk as well. Silk brand almond milk has just as much of this essential vitamin D as “vitamin D milk”! Finally, the delicious cocoa doesn’t just hide the “green-ness” of the avocado, it also contains polyphenols, which act as antioxidants and help protect against disease.

This might be the healthiest and tastiest pudding you’ll ever enjoy. And with only seven ingredients, you know that you’re giving your body only the best!

Ingredients (makes two 4 oz. servings):

½ cup almond milk (Silk brand)
1 banana, sliced/frozen (about 13 slices)
½ cup cold avocado, cubed
4 tsp cocoa powder
3 medjool dates, chopped
¼ tsp vanilla extract
dark chocolate bar (70% cocoa or higher)


1) Cut banana into slices, place into freezer bag and freeze overnight.
2) Combine almond milk, frozen banana slices and cubed avocado in a blender and mix until smooth.
3) Blend in cocoa powder, chopped dates and vanilla extract. For extra sweetness, add 1 or 2 more dates.
4) Spoon pudding into two dessert dishes. Use a cheese grater or lemon zester to shave chocolate bar, and sprinkle dark chocolate shavings over top of pudding.
