April is when we can finally say “goodbye” to winter because spring is here at last! In April, we welcome all the green after so many months of gray. Due to warmer weather and spring rains, fruits and veggies are growing in great abundance and are at their nutritional peaks. Depending on where you live, your local farmer’s market may be selling locally grown produce like those listed below. So April is the perfect time to recommit to those long-forgotten New Year’s resolutions and kick-start your diet.
What’s in Season: April
April is also the time of year for planting a garden. Sow some seeds now, and in a few weeks, you may have your own beans, Brussels sprouts, broccoli, carrots, cauliflower, leeks, peas, and greens coming up. Even if you don’t have much of a green thumb, lettuce, green beans, carrots, and radishes are pretty easy to grow. Just make sure you plant them in good soil with daily sunshine and that you water them as needed.
This month’s meal plan features many of the fruits and vegetables you will find growing (and that you can grow yourself) in April. The USDA recommends filling half your plate with whole fruits and a variety of vegetables, so if you are trying to eat for good colon health, then you are in luck this month because there are so many from which to choose.
