Grapefruit and Avocado Salad

It's the time of year when we start the countdown to spring. The hustle and bustle of the holidays is over, the decorations have been taken down and the out-of-town guests have made their way back home. Even though the festivities have ended and the cold weather lingers, winter still has more to offer.

This is the peak season for citrus fruits, which means there are delicious and healthy recipes waiting for a chance to grace your table. One of those fruits is grapefruit. Once you remove the peel, you’ll discover a wide array of nutrients that can help you maintain your health. For instance, grapefruit juice contains an abundant amount of cancer-fighting antioxidants. This includes vitamin C, which helps your immune system combat disease.

Grapefruits also have flavonoids to slow down the production of cancer cells and lycopene, a carotenoid that fights free radicals. Once you consider all that this fruit has to offer, it’s hard to turn down a recipe with grapefruit in it, especially if it involves a creamy avocado. This winter salad is combined with sweet vinaigrette dressing, creating a tasty meal that has just as much flavor as it does health benefits. Plus, it’s easy to prepare. The most difficult part is cutting the grapefruit. With dishes like this, why bother counting down to spring?

Grapefruit and Avocado Salad


  • 2 large pink grapefruits, peeled and sectioned
  • 2 large avocados, peeled, pitted and sliced
  • Salt and pepper to taste

For vinaigrette:

  • 1/4 cup canola oil
  • 2 tablespoons white vinegar
  • 2 1/2 teaspoons agave nectar


  1. Peel and section two grapefruits.
  2. Peel and slice two large avocados and arrange on plate with grapefruit.
  3. Combine canola oil, vinegar and agave nectar in small bowl and pour over grapefruit and avocado.
  4. Add salt and pepper to taste and enjoy.
